One of the best things about working from home is the fact that I can make myself something a little upscale for lunch if I desire. Typically, I just make myself something as simple as possible, often a sandwich. However, some days I want something more interesting. Today was one of those days. But what to make? I’m a big fan of fish but my spouse isn’t. So if I want to make fish, I either need to
- Make something else for him to eat
- Have it when we go out to dinner
- Make it for myself for lunchtime
Because I like to cook fish and I’m pretty good at it, the best of these options is to make fish for lunch. I had a small piece of trout available and also a package of spinach. So I decided to make myself blackened trout with sauted spinach. Both of these items take very little time to cook and can be managed simultaneously. This allowed me to get the dishes made in my limited lunch break time.
The really nice thing about making something like this for lunch is that it allows me to have a pretty hearty and filling lunch without consuming a ton of calories.
