It is the first week of the summer CSA and the vegetables are coming on. Our box was super heavy this week and filled with great goodies including:
- bell peppers
- sweet corn
- slicer tomatoes
- peaches
- cucumbers
- arugula
- green onions
- cauliflower
- new potatoes

I was most amazed by the cauliflower which was, I kid you not, the size of a basketball. I also have enough green bell peppers between last week and this week’s box to make enough batch of stuffed peppers. Super yum! Hopefully this week’s corn is a little sweeter than last weeks. We got 6 ears which is enough to make a corn salad if we don’t want to eat them plain. Luckily there were no cherry tomatoes this week. So hopefully I can finish off the ones I have in a pasta dish with the arugula.
Thanks to a co-worker of my husband giving us cucumbers plus the ones in the box, I have enough to make a huge Asian cucumber salad. That will go great with the flank steak I have in the freezer. I hope that perhaps we will get some eggplant, okra or hot peppers in the coming weeks. Only time will tell. In the meantime, we’ll have BLTs or burgers to use of the slicer tomatoes and likely freeze another batch of peaches.
