Strawberries and Cream

I know it seems a little crazy but one of my favorite ways to have fresh strawberries is strawberries and cream. It is SUCH a decadent treat from my childhood that I feel spoiled and a bit naughty when I make it.

For those of you who aren’t familiar with it. Basically you combine fresh strawberries with heavy cream. With the strawberries the more ripe and squishy they are the better because the classic way to make it is to cut up a cup of strawberries, put them in a bowl and then mash them with a fork. To this you add about 1 cup of cream and a teaspoon of sugar and mix. The result is meant to be soupy in texture.

For me I like to puree 1/2 cup of strawberries and just leave the other 1/2 cup chopped. Then I combine this with the cream and sugar. This makes for a really great treat on a hot summer day. The taste of this dish is somewhat similar to strawberry creamsicles.

If you want to to create a frozen treat, you can mix the strawberries with some plain yogurt and then freeze it into popsicle shapes

2 cups of strawberries chopped
2 cups strawberries pureed
16 oz Non-fat Greek yogurt
2 Tbs of sugar
