I typically make a warm appetizer for Thanksgiving Day. Each year I try something a little bit different. In past years, I’ve made stuffed mushrooms, mini quiche, and mini tacos. This year I decided to make spinach stuffed puffed pastry. First, I preheated the oven to 400 degrees, While I was waiting for the oven to hear, I made the filling. For the filling I sauteed shallots and garlic then added fresh spinach and wilted it. Once the spinach was wilted, I added grated Pecorino Romano cheese. Next I beat an egg for a wash. Then I took a piece of puffed pastry and cut in half. I spread out the filling on one piece of pastry. I washed the edges with egg. Then I laid the other piece of puffed pastry on top and washed the entire top with egg. I place the complete dish in the oven and baked for 20 minutes. The final product was crispy but moist and savory on the inside.
