Sitr fried Chile Garlic Shrimp and Green beans

One quick meal that I like to make is a noodle stir fry with shrimp, green beans and noodles. Since I typically have lots of basil and green beans from my garden or the CSA box readily available this is a go to recipe. What I like best about this recipe is that it is super simple, fresh and very quick to make.

Stir fried Chile Garlic Shrimp with Green Beans

1 lb Large peeled, deveined shrimp
1/2 pound green beans cut in half
3 oz Pad Thai Noodles
3 tbs Chile garlic sauce
4 cloves of garlic sliced
1 cup of fresh Thai basil

Bring pot of water to boil and blanch the green bean, this means cooking them for about 3-4 minutes. Pull them out of the water using a slotted spoon and stop the cooking by putting them colander and spraying them with cold water. Take the hot bean water and use it to soften the 3 oz of noodles by soaking them for 25 minutes.

Heat canola oil in wok on high and add garlic and chile garlic sauce until sizzling. Be careful not to burn the garlic. Add shrimp and saute for 1 minutes. Add green beans and saute for 1 minute. Add noodles and saute for 2 – 3 minutes. Make sure the shrimp are cooked. They’ll be pink and slightly firm. In the last 30 seconds stir in the thai basil.

You can make this sans noodles as well just double the amount of green beans. I was making it this way for a while when I was trying to make very low carb meals.
