I have a package of store bought gnocchi that has been sitting in my cupboard for a while that needed to be used. Tonight seemed like a good night to use it up since Tuesday is pretty much pasta night at our house. I also have quite a bit of sausage in my freezer that I need to use up and bit of leftover pesto in my fridge. So I decided to make gnocchi and sausage with pesto.
- 1 package of store bought gnocchi
- 4-5 sausage links, smoked sliced
- 1/2 cup of sliced mushroom
- 1/2 cup of red peppers julienned
- 1 1/2 tbs of pesto
- 1/2 cup of grated parmesan cheese
- 1 tsp grape seed oil
- Bring pot of water to boil and cook gnocchi until it surfaces
- Heat oil in large frying pan
- Cook slices of sausage until brown. Add mushrooms, peppers and saute
- Drain gnocchi and add to pan. Saute browning gnocchi.
- Add pesto, saute and mix
- Top with parmesan cheese
