Sausage and Gnocchi with Pesto



I have a package of store bought gnocchi that has been sitting in my cupboard for a while that needed to be used. Tonight seemed like a good night to use it up since Tuesday is pretty much pasta night at our house. I also have quite a bit of sausage in my freezer that I need to use up and bit of leftover pesto in my fridge. So I decided to make gnocchi and sausage with pesto.

  • 1 package of store bought gnocchi
  • 4-5 sausage links, smoked sliced
  • 1/2 cup of sliced mushroom
  • 1/2 cup of red peppers julienned
  • 1 1/2 tbs of pesto
  • 1/2 cup of grated parmesan cheese
  • 1 tsp grape seed oil
  1. Bring pot of water to boil and cook gnocchi until it surfaces
  2. Heat oil in large frying pan
  3. Cook slices of sausage until brown. Add mushrooms, peppers and saute
  4. Drain gnocchi and add to pan. Saute browning gnocchi.
  5. Add pesto, saute and mix
  6. Top with parmesan cheese
