Salmon is one of my favorite things to eat. I especially like it for lunch because it came easily be cooked in foil on the grill or in the toaster oven. It is great with brown rice and some sautéed veggies. So today I decided to take advantage of those facts and make myself a little pseudo bento box for lunch.
For those of you who aren’t familiar with the concept or term, Bento is a single-portion takeout or home-packed meal common in Japanese cuisine. Bento typically come in box shaped container and consist of meat or fish, rice and cooked or pickled veggies. Sometimes you’ll get high cooked and pickled veggies. The term bento box is a bit of an oxymoron because the box piece is implied in the term bento. I digress though.
The basic idea is a boxed lunch that it is often warm and has several components. All the components end up being put in a box for transport. This is why my bento lunch is psuedo because I don’t have a box to put them in. That being said even though today’s combo is on a plate it has some dishes often in a bento: salmon, rice, and stir fried vegetables (eggplant and mushroom)
