It has been cold and rainy here for more than a week. My spouse has wanted soups for dinner. I made a cream of broccoli cheese one earlier in the week but decided tonight I wanted something without a dairy base.
I like both Italian wedding soup and minestrone. However, I didn’t have a complete set of ingredients for either. What I did have was
- tomatoes and zucchini about to go bad
- frozen meatballs
- homemade chicken broth
- a bunch of random pasta
So I fire roasted the tomatoes and zucchini then diced them up. Next I sauteed onion and garlic in a pot. To this I added the tomatoes, zucchini, and chicken broth. I simmered until the zucchini and tomatoes softened. Then I added my frozen meatballs and simmered some more. The meatballs needed to be “cooked”. Lastly, I added pasta and simmer til a dente. When I dished it up I topped it with grated Parmesan cheese and crushed red pepper. In terms of pasta, I put ditalini and mini ravioli in because I was using bits up but I think mini ravioli would be my preferred pasta choice.
