One thing I’ve always wanted to try is to make is corned beef from scratch. What I mean by this is that one takes a beef brisket and brine it for a period of time. Typically 7-10 days. This turns the brisket into the corned beef that you’re used to buying and cooking from the grocery store. To start this process you need
4-6 lbs of beef brisket
3 tbs Pickling spice
2 cups Kosher salt
3 tsp Pinking/curing salt
1/2 cup Brown sugar
1/2 Cinnamon stick
1 gallon Water
Combine the kosher salt, pickling spices, pinking salt, brown sugar, cinnamon stick and water in a pan. Bring to a boil then allow to cool completely.

Place the meat in a 2 gallon zip lock bag and add brine. Make sure you remove any extra air from the bag then place in the refrigerator for 7-10 days to cure. When the curing is completely you can cook the meat off the same way you’d cook off a store bought corned beef!
