Lime Cilantro Tacos and Southwest Corn Salad

One of the great things about living in Houston is that it is often warm at Christmas-time. This means you have lots of choices in terms of the tasty food you can have at Christmas-time. This year I decide to make a meal with a southwest flair: Lime Cilantro Tacos and Southwest Corn Salad.

Southwest Corn Salad

Ingredients
  • 4 cups Corn kernels
  • 1 red bell pepper, diced
  • 1 red onion, chopped
  • 2 jalapenos
  • 1 can black beans
  • 1 cup chopped fresh cilantro
  • 1/2 cup olive oil
  • 4 cloves garlic, peeled and minced
  • 3 limes, juiced
  • 1 teaspoon white sugar
  • salt and pepper to taste
  • 1 tablespoon hot sauce
Instructions
  1. Place corn in a medium bowl. Mix in the black beans, red bell pepper, diced jalapeno and red onion.
  2. In a blender or food processor, mix 1 jalapeno, cilantro, olive oil, garlic, lime juice, sugar, salt, pepper, and hot sauce. Blend until smooth, and stir into the corn salad.

Because I have a tortilla press I decide to make fresh tortillas with masa I had on hand. Fresh tortilla, pork and corn salad made for an awesome fresh meal.
