Kumquat Bundt Cake



I typically am not a cake baker because and entire cake really isn’t something I can easily make sure gets eaten at my house. I make cakes for birthdays but otherwise only for events with a large number of people. However, as I mentioned a previous post, I have more kumquats from my neighbor than I really know what to do with. So I decided that perhaps a kumquat cake would be a reasonable idea.

I discovered a nice recipe for a kumquat bundt cake and I have a bundt cake pan so I decided to give it a go. https://www.thespruceeats.com/tangy-kumquat-bundt-cake-recipe-304466

The most difficult part of this recipe is running the kumquat puree through a sieve. Otherwise it is super simple, incredibly moist, and nicely tart. I gave 3/4 of the cake away to various neighbors one who said “OMG that was amazing”. So maybe next time I’ll make cupcakes with the mixture which would make it easier to share.
