Korean Dinner

One of my favorite ethnic foods is Korean. I’m especially a big fan of the various side dishes and grilled meats at Korean barbecue. We have a several restaurants that serve this in our area.

However, my son isn’t a big fan of this kind of food. So I thought that it would be good if I could make Korean dishes at home because then I could make something different for my son.

The first dish I decided to try making was Bulgogi beef. I bought a jar of bulgogi marinade from our grocery store and a jar of kim chi at the asian grocery store. I could have made my own Bulgogi marinade using a recipe. However, I decided it would be simpler to just get a marinade from the store and some boneless short ribs which I could thinly slice and marinate.

After marinating the meat for 24 hours, I heated a cast iron skillet with grill ridges and cooked the meat. I also sliced bok choy in half seasoned withe salt and cooked them on the cast iron pan. When I removed the bok choy from the pan I sprinkled with sesame oil for flavor.

The final meal consisted of bulgogi beef, kimchi, and sesame bok choy. Ideally I would have also served kimchi cucumbers (aka Ooi Sobaggi) but the batch I had made spoiled due to me not getting the jar properly sealed. Maybe another time!
