One of my favorite breakfast things are sous vide egg bites at Starbucks. Along with being super tasty, they contain a terrific amount of protein and no carbs. As a result they a pretty much my “go to” quick breakfast pick up thing. The only problem is that they are kind of an expensive habit and take time to pick up in the morning.
So I was wondering if I might be able to make them myself. So I searched the internet and found this recipe. It isn’t necessarily what I would choose to put in my egg bites. However, it provided me with the basics to make my own recipe. Since I have an instant pot, I decided to give them a whirl. I mixed up some cheese, egg, diced tomato, and spinach. Then filled the silicone molds and popped it into the instant pot. Few minutes later voila! egg bites.
Biggests downside? The bites absolutely refused to come out of the mold whole. This might be due to not enough cooking spray on the mold or the fact my eggs mixture was a little softer than I would have liked.
So I tried a take two and instead of using the mold I put the egg into little glass cups/containers. The EASILY came out. So I’m thinking maybe mini jelly jars might be easier to use if the silcone mold is a fail whale again. My trick to warming them is to use the toaster oven to get a nice crispy/firm exterior. They tasted really good and are definitely worth refining how to get them just right.
