Creative Halloween Treats

This week my son’s class is having their Halloween celebration at school and mommys are supposed to volunteer to bring something. I actually LOVE making things for my son’s class because it gives me a chance to experiment and be a little creative. However, I forgot to sign up until the last minute!

If you aren’t a mom, let me explain. Signing up last means you get left with the most difficult stuff. The stuff no other parent wants to take responsibility for. All the easy stuff like napkins, plates, juice boxes, their gone. So my the time I got to the sign up sheet, only cupcakes or fresh fruit were left.

I like cupcakes as much as the next person but making Halloween cupcakes which aren’t ho hum is hella time consuming. And fresh fruit, BORING. So I did some Googling and fired off a quick email to the teacher asking if I could bring chocolate covered strawberries. After confirming no allergies to chocolate or strawberries in the class and getting a “thumbs up” from the teacher, I put together the cutest strawberry ghosts!

These might LOOK fancy and difficult but they actually were a snap to make.

  • Step one get some candy eyes, strawberries and white chocolate for melting.
  • Step two wash strawberries and dry completely.
  • Step three melt white chocolate in the microwave. Go slow, stir frequently, do not burn.
  • Step four (this is the trick) add a tablespoon of canola oil to the chocolate and mix well. This will make the chocolate a bit more runny and make it easier to dip into.
  • Step five dip the strawberries one at a time. Set on parchment and IMMEDIATELY after dipping add the eyes.
  • Step six impress the other mommies with your fancy/not fancy treat
