Bacon Buffalo Cheeseburgers

Last weekend I picked up some ground buffalo and fresh bacon from one of my favorite vendors at the Farmer’s Market. My plan was to use both ingredients to make some yummy bacon cheeseburger. After a long day of sailing today, that is exactly what I did.

4 slices bacon
1 lb ground buffalo
4 slices Muenster cheese
Red onion slices
Pickle slices
Tomato slices
Lettuce
Whole wheat buns

Divide the ground buffalo into 4 quarter pound patties. Heat the grill to high and place patties on grill. For medium rare burgers cook 3 minutes per side. Place 2 slices of cheese on each burger and cook for 1 minute more. While burgers are cooking, toast whole wheat buns and fry bacon. Remove patties from grill and assemble burger. Mine is topped with brown mustard, ketchup, pickles, and red onion. Others, including my spouse enjoy including lettuce and tomato with their toppings.
