Avgolemono

The lemon saga continues….

I’ve previously mention the crazy number of lemons my bush produced this year. So far I’ve made a bevy of desserts lemon meringue pie, lemon tart, lemon bars, lemon jam. We can only eat so many desserts in our house though.

So I’ve been considering what other recipes I can make with the lemons which aren’t dessert. One possibility is Avgolemono. This is a lemon chicken and rice dish common to Greek cooking. Some people will say that Avgolemono is a soup. It can be a soup, but it also can be a main dish. It really depends on the thickness and how you choose to treat the chicken.

If you want to make it as a soup then you’ll cook the chicken and debone and shred the meat to put back into the liquid to end up with a thick and creamy soup. If you want to make it as a main dish, then you break up the chicken into edible pieces but leave it on the bone. You end up serving the pieces with the creamy lemon sauce on top of them.
