We often make bacon for breakfast on the weekend. It is one of my son’s favorite things. The problem is that we always have bacon grease leftover. I can put it in with our compost but this seems like a waste. So I’ve been trying to think of other ways to use it. The solution came to me one night when I was using olive oil to coat my potatoes to roast for dinner. Use the extra bacon grease for roasting the potatoes, save some of the bacon strips, and make bacon and potato soup.
First, cook the bacon, save the grease and 4 strips of bacon. Next, take the warm bacon grease and coat the diced potatoes with it. Spread the potatoes out on a baking sheet lined with parchment. Roast until cooked and crispy. Use a paper towel to remove the extra grease from the potatoes. Dice the bacon into bite sized pieces. Take 3 tbps of bacon grease and melt in a pot. Saute onion in the grease. Add 3 tbps of flour and make a roux. Add 1 1/2 cups chicken broth and simmer until the flour is dissolved. Add 2 cups of milk and simmer until thickened. Add cooked potatoes and diced bacon. Warm through and serve.
