Some days it is REALLY hard to get excited about making food. This is especially true when I’m cooking for my six year old and I. He is the typical “picky eater”. He has his favorites: mac & cheese, any tube meat (aka sausage, hot dogs), pasta, grilled cheese and most recently he decide chicken nuggets are acceptable.
So most of the time when it is just the two of us, we eat out in some fashion. It is simply easier than making two separate meals. As a result, I’m sort of in a food funk this week. Part of me wants to make something nice but a huge part of me can’t be bothered with the effort and having leftovers.
There are so many delicious possibilities for winter but I’m just not feeling it when he’s the only audience. So maybe I’ll bake off some cookies tonight instead. THOSES he’s always up for devouring.
