Chocolate Oatmeal Cookies



I’ve been doing some type of baking almost every weekend this fall. Many times I’ve made cookies. My son really enjoys making cookies because he is able to help by adding the ingredients, turning on the mixer, and dropping cookies on the pans. I thought a little about making no-bake cookies this weekend so my son could participate more. No-bake chocolate oatmeal cookies are very easy to make but with the humidity here I wasn’t sure they would setup correctly.

I decided that this week’s cookies would be chocolate chip oatmeal cookies. We’re big fans of chocolate at my house and I like oatmeal a lot too. Often I’ll make chocolate ship, cherry oatmeal cookies. However, I couldn’t find dried cherries at the grocery store this morning. Oatmeal currant cookies are a really good too. The hardest part of making any oatmeal cookies is not over mixing the batter. If you do this then the oats in the cookies will break down too much. I like my oatmeal cookies to have tangible oat in them. Otherwise, one might as well use oat flour. I’ve posted several variations of recipes on oatmeal cookies on this blog.

This week’s batch wasn’t nearly as fancy. I used the basic Better Homes & Gardens recipe for Oatmeal Cookies and added chocolate chips. I like to use Ghirardelli Chocolate Premium Baking Chips Bittersweet Chocolate Chips because they are 60% cacao are a little sharper tasting than traditional chocolate chips. Simple things like this are easy to create and make for a nice treat during the week.
